Last fall I bought 2 pie pumpkins before the Farmers Market closed. I used them for decorating in the fall (not carved though) and decided it was time to bake them. They were baked in the oven and then I used my new food processor to puree the pulp.
I made a pumpkin pie from the first 2 cups and froze about 4 more cups to use later.
The food processor made the job easier than using an old food mill. I was pleased with the texture and flavor of the pie. Since we use quite a bit of spice in our pumpkin pie, it was hard to tell if the pumpkin tasted different than canned. It was quite a dense pie but definitely good, if not very good.
Can't wait to make something else pumpkin; maybe some pumpkin bars.
