Another Perfect Breakfast - Baked Oatmeal Bars

A few years ago I started making this version of oatmeal. Its good right out of the oven but equally as good later and even good cold.  It makes great car food for breakfast on the go or for a snack. I think of it as a sort of oatmeal cookie/bar without the really high fat content.

Oven Oatmeal

2 cups uncooked oats
½ cp packed brown sugar
½ cup dried fruit
½ cup chopped nuts
1 teaspoon baking powder
1 ½ cups skim milk
½ cup applesauce
2 tablespoons oil or melted butter
1 egg

Preheat oven to 375 degrees F.
In a mixing bowl, combine oats, brown sugar, dried fruit, nuts, and baking powder.
In a separate bowl or measuring cup, combine the liquid ingredients – milk, applesauce, fat, and egg.
Add liquid ingredients to dry; mix thoroughly.
Pour mixture into a prepared 8-inch square baking pan. Bake for 20-30 minutes or until golden brown on top and set.
